I absolutely love dandelions! I prefer their greens when they are young and tender, or after the first frost when the bitterness has died down. They have a very good nutritional value. My biggest fear around here is eating roots which have absorbed a bunch of pesticides or other poisonous chemicals, so hoping to avoid serious contamination, I stick with leaves and flowers. Especially the flowers. I have found them quite good in stir fries, and as stew additions. I made a dandelion flower extract and it tastes yummy, though it's properties are allegedly much weaker than the root or leaf. Dandelion root especially is said to be good for the liver. I believe that this is true, and dandelion was one of the components of the first herbal detox tea that I drank a year ago which helped my body get rid of the NSAID toxins. Dandelion is safe and easy to grow, so hopefully by next year I will have a huge healthy chemical free patch.
